

Wedding Reception
I was contracted to provide three, heat and serve entree items a for a small, 120 person reception buffet this past weekend. Hors d'oeuvres and salads were provided by friends and family. Because I needed to feed 120 people I wanted at least 120 pieces of each item. Italian Ricotta Cookies
After the Wedding cookies were done I started on the Ricotta cookies. Again, a reasonably simple cookie with more of a cake texture than your typical cookie crumb type texture. The ingredients are. 1/2 lb. butter 2 cups sugar 1/2 teaspoon salt 1 lb. Ricotta cheese 2 large eggs 1 tsp. I got a call a few days ago from a long time friend asking if I could make some Italian cookies for her this Saturday. She said she had a Italian family reunion and wanted to take some cookies and would need about 100.
